Open-Faced Sandwich on Full Dark Rye Scandi Sourdough x2

Images show a variation on a theme; the ingredients will be seasonal and delicious. Using the "Scandi" loaf, which is a full dark rye with a hint of caraway seed and is also sourdough and organic, we slice this and lay some delicious cold cuts, pickles and other delicious lunchtime foods on there.

This will consist of two loaded slices of dark rye bread with some delicious cold cuts of aromatic and healthy home produced lunchtime foods.

This Saturday we are aiming at doing.... 1, 2 or 3:-

1. Thinly sliced rare roast beef, with butter underneath, mustard, and sliced home grown radishes as well as raw onion and olive from brine.

2. Home made garlicky houmus with cumin, roasted aubergine and pumpkin slices seasoned with olive oil, salt and za'atar. with micro herbs - home grown

3. Walnut pesto (with home grown basil), containing Parmesan cheese and garlic as well as pine nuts, and extra walnut, on a layer of cream cheese.
